This past weekend Krista and I got together for a lemonade party. We each made one version of lemonade and set out a little table setting to make it more special. We had fun creating and this idea could easily be expanded on if you were having more people over. Krista made beet lemonade and I made peach. We were both pleased with how they turned out- and since then, I made the leftover peach lemonade into popsicles and they are so delicious!

For the beet lemonade, you will need:
1/3 C pure beet juice
2 C plus 2 tbsp water (for simple syrup)
Juice of 3 lemons
2 tbsp brown rice syrup (you could substitute the water and brown rice syrup for maple syrup or agave)

Cut, wash and juice 1-2 small-medium beets- set juice aside
In a saucepan over medium –high heat, add 2 tbsp water and 2 tbsp brown rice syrup
Bring to a boil and set aside
Juice lemons
Add 2 C water, beet juice and brown rice syrup mixture to lemon juice
Chill in fridge until serving

Note: I added quite a bit of additional water because it was much too sweet. I would also suggest cutting the sugar at least in half, or to taste, as I found 1 cup was too much.
