Trust me something that tastes this good deserves a long title. I was craving something sweet and also discovered at that time the bananas I had recently purchased had ripened much quicker than I had anticipated. I had a choice, leave the bananas alone and just eat some chocolate, make banana bread with or without chocolate or I could freeze these bananas and make some soft serve “ice cream”. The last choice, although required patience, emerged as the winner and what came out of the frozen bananas is a mixture of ingredients that are tasty on their own – peanut butter, chocolate and bananas, but when combined are simply delicious.
- 5 bananas, peeled, chopped and frozen
- 1 1/2 tablespoons of almond milk
- 1 teaspoon of vanilla extract
- 3 tablespoons of peanut butter or nut butter of your choice
- 4 large squares of chocolate or 1/3 of a cup of chocolate chips of your choice
Peel bananas and roughly chop into small pieces. Place in sealed bag or container and place in freezer for 9 hours. Chop chocolate (if using squares) in food processor. Set chopped chocolate aside. Place frozen bananas in food processor. Add vanilla and almond milk. Process until smooth. Add peanut butter and chocolate and process again until all ingredients are incorporated. Enjoy immediately or place in freezer to be eaten later.
I must admit it’s not the most photogenic dish, but you’ll have to try the recipe to taste it for yourself. Using bananas as a base for this “soft serve” is a great vegan and allergen friendly alternative to typical ice cream and much healthier too. This will be a great easy recipe for the hot summer months and using the banana base the flavor possibilities really are endless!
