Happy Earth day everyone! Today, in honour of earth day I’m featuring a salad recipe to showcase some of the finest (nutrient dense) foods from mother nature herself. Kale, spinach, broccoli and hemp seeds are all “super foods” in their own right for their nutrient density and other health benefits. Kale and spinach are staples in all of my salads, other lettuce to me just doesn’t measure up.  I usually make 1-2 huge batches of salads to eat throughout the week to ensure I have some go to food when life gets busy.

Dressing

  • 4 cups of soaked cashews (Soaked in water for 8 hours or overnight)
  • 2 cups of cooked cauliflower
  • Juice of 1 lemon
  • 1 tablespoon of seasoning salt
  • 3 cloves of garlic, minced
  • Pepper to taste

Process all ingredients in a food processor until smooth. If you have a smaller processor like I do, you can process the cashews and cauliflower in batches. Note that this makes a huge batch of dressing. I use this recipe for sauces for pasta or as a spread for wraps as it’s really versatile.

Salad

  • 3 cups of baby spinach, washed
  • 3 cups of kale, washed
  • 3 cups of chopped broccoli
  • 2 large sweet red peppers
  • 3 green onions, chopped
  • 1 large cucumber, chopped
  • 1/2 cup of hemp seeds
  • 1/2 cup of sesame seeds

Pull kale leaves off of the stem and wash thoroughly along with spinach. Wash broccoli heads and chop removing stem. Wash pepper and cut to remove seeds, chop into smaller pieces. Chop green onions and cucumber. Place hemp and sesame seeds on baking sheet lined with parchment paper. Place in oven at 200 F for approximately 10 minutes. Assemble salad and massage in dressing. I usually keep seeds and salad dressing separate so the salad does not wilt.
