After visiting the Naked Sprout restaurant in Burlington with Brad a few weeks ago we were inspired by the pulled tofu sandwich Brad ordered. We came across some smoked tofu in the grocery store recently and I knew we had to try and recreate the sandwich. So here’s the recipe for our creation, “pulled” bbq tofu sandwich and sweet potato fries. This is an easy recipe and perfect for when the weather warms up too.
Pulled BBQ Tofu Sandwich
- 1 pkg smoked tofu, drained
- Bun or bread of your choice
- 1/2 cup of BBQ sauce (we used Sweet Baby Ray’s)
Preheat oven to 350C. Shred tofu using a cheese grader. Place shredded tofu on a cookie sheet with parchment paper (remember to check what temperature your parchment paper can be heated too). Bake tofu in oven for 8-9 minutes. Add shredded tofu to sauce pan on stove. Add BBQ sauce to tofu and heat through. Serve warm on bread or bun of your choice. Note: depending on the type of tofu you get may need to press to drain more water.
Sweet Potato Fries
- 3 sweet potatoes
- 1 tbsp melted coconut oil
- Salt and pepper to taste
Peel sweet potatoes and cup into wedges or fries. Place fries in a bowl. Pour melted coconut oil and add salt and pepper to taste. Mix using hands or tongs. Spread fries on baking sheet and bake at 400C for 40 minutes, using tongs to turn the fries part way through.
